How does hot water affect the nutrients?

For some water soluble vitamins such as the B group vitamins, our lab tests showed that when they are placed in hot water, the nutrient content of the vitamin is extracted. In fact, as you can see in the results below, the hotter the water and the longer it is steeped for, the more the nutrients are extracted.

The table below shows the higher amount of nutrient present in a steeped cup of tea at 95○C compared to a cup of tea that is steeped at 80◦C.


 

 

 

 

 

 

You can see that for Vitamin E which is a fat soluble vitamin, after being brewed in hot water at 95ºC, 94% of the vitamin content was destroyed, hence we do not include fat soluble vitamins in Eloments teas
